    Today is my first day back into the business full time in years (“retirement” job) so I’m a little rusty. Just curious if I’m in the ballpark on a time estimate for two buckets and a rear seat for a 97 Sebring convertible, 12 hours sound reasonable?

    That's a bit low in my opinion. If you're making them from scratch I would say at least 16 hours. Another option is to purchase a leather or vinyl interior from Katzkin or Roadwire for around $500 to $600 and charge $700 or so to install it.
